Cookies:
5 lbs flour
3 cups shortening
4 cups sugar
2 tbsp + 2 tsp baking powder
1 tbsp vanilla
1 tsp salt
6 egg
1 cup almonds, toasted and chopped
1 cup milk (approximately)

Icing (optional)
3 egg whites
juice of of a lemon
1 box less cup powdered sugar
nonpareils

Directions:
Directions:
Cookies: Mix flour, shortening, sugar, baking powder and salt like a pie dough. Beat eggs and add to flour mixture with milk and nuts. Roll out in small batches and cut to various shapes according to the holiday. Or, more traditionally, cut off small pieces of dough (about finger length and width) and shape into free form scrolls and fans. Bake at 400 for about 10 minutes.

Icing: Beat egg whites until stiff. Add lemon juice and powdered sugar and mix. Spread on cooled cookies and sprinkle with nonpareils.
