1 lb bulk pork sausage
3 c hot cooked grits
2&1/2 c shredded cheddar cheese
1 T butter
3 eggs beaten
1&1/2 c milk
1 small can chopped green chilies (or 1/4 c Rotel)
1 small clove garlic minced
1/2 t onion powder
crushed red pepper (optional)

Directions:
Directions:
Cook and drain sausage and put in a 9x13 inch baking dish. Combine grits, cheese and butter and stir into grits until melted. Combine eggs, milk, garlic, chilies and seasonings. Stir into grits and pour over sausage. Bake 1 hour at 350. Can be made the night before, refrigerated and baked in the morning.
