8oz sour cream
3/4 c vegetable oil
3/4 c cream of coconut
1/2 t vanilla
1 box white cake mix with pudding
8oz cream cheese softened
1/2 c butter softened
1 t vanilla
1 box (16ox) confectioners sugar
1 package (14oz) flaked coconut divided

Directions:
Directions:
Grease and flour three 8 inch round cake pans. Preheat oven to 350. Beat eggs on high for 2 minutes. Add sour cream and next 3 ingredients beating well after adding each. Add cake mix and beat on low until well blended then beat on high for 2 minutes. Pour into pans and bake for 35 minutes until toothpick comes out clean when inserted. Cool for 10 minutes on rack and remove from pans. Allow to completely cool. Beat cream cheese and butter until creamy. Add vanilla & beat well. Gradually add confectioners sugar beating until smooth. Stir in 2&2/3 c coconut. Spread frosting between layers, top and sides of cake. Sprinkle remaining coconut on top and sides or cake and refrigerate.
