3/4 c. Kalamata olives
2 oz. pimentos, drained well
1 1/2 T. capers, drained and rinsed
1 clove garlic, minced;
1 T. dried parsley (or 1/8 c. minced fresh)
1/8 tsp. fresh black pepper
1 1/2 T. extra virgin olive oil
1/2 tsp. basil

Directions:
Chop olives in a food chopper. Repeat with capers. Mix all ingredients and set overnight. Note: when using food processor, be careful that the texture does not become paste. Serve with crispy crackers or bread. Options: use other varieties of olives - adjust the salt accordingly.
