1/2 cup sugar
2 tbsp all-purpose flour
1 tsp shredded lemon or tangelo peel
5 cups sliced, peeled fresh pears (2 1/2 #)
3 tbsp lemon juice

Pastry shell single crust pie

Topping:
1/2 cup all-purpose flour
1/2 cup sugar
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground mace
1/4 cup butter

Directions:
Directions:
Combine 1/2 cup sugar, 2 tbsp flour and lemon peel. In a large bowl, sprinkle pears with lemon juice. Add sugar mixture to pears then toss to coat fruit. Fill a pastry lined 9 inch pie plate with pear mixture. In another bowl, combine 1/2 cup flour, 1/2 cup sugar, ginger, cinnamon and mace. Cut in butter until mixture resembles coarse crumbs. Sprinkle crumb mixture over pear filling. Cover edges of pie with foil. Bake at 375F for 25 minutes. Remove foil and bake for another 25-30 min or until pie is bubbly and crust is golden. Cool on wire rack before serving.
