2 lb. frozen hash browns
½ cup finely chopped onions (can use green onions)
2 cups grated cheddar cheese
1 can cream of chicken soup
1 stick butter
2 cups sour cream
2 cups crushed corn flakes

Directions:
Directions:
Saute’ onion in ½ stick butter. Mix potatoes with sour cream, soup, cheese, salt and pepper. Add onions. Put in 9 x 13 casserole dish. Melt ½ stick butter, mix with corn flakes and spread over potato mixture. Bake at 350° for 45-55 minutes.

Note: To make this recipe more festive, add a few red and green finely chopped bell peppers.
