Cake:
1 c oatmeal
1 1/2 c boiling water
1 c brown sugar
1 c white sugar
1 cube oleo
2 eggs
1 1/2 c flour
dash of salt
1 tsp soda
1 tsp cinnamon
1 tsp vanilla
2 tsp baking powder

Icing:
6 tbsp oleo
1/2 c brown sugar
1/4 c milk
1 c coconut
1/2 c pecans

Directions:

Cake:
Mix oatmeal and water, let set. Combine remaining ingredients and mix with oatmeal. Cook at 350 degrees for 40 minutes.

Icing:
Mix together until it boils. Ice Cake

This was always a family favorite although as a little girl, my Mom didnít tell me it had oatmeal in it until after Iíd eaten it! It was moist and delicious.
