2 quarts chicken broth
3 to 4 chopped green onions
2 ripe chopped tomatoes
4 tbls. butter
10 thin corn tortillas, cut into thin strips
8 oz Mexican white cheese or Monterey Jack cheese
1 ripe avocado, diced
4 to 6 tsp. sour cream
Cilantro sprig for garnish

Directions:
Directions:
Combine broth, onions and tomatoes in soup pot. heat together gently. Melt butter in skillet. Saute tortilla strips until brown and crispy, but not burned. Drain on paper towels.

In bowls put a handful of the crisp tortilla strips, 2 oz of shredded cheese, avocado and 1 tsp. of sour cream. Carefully pour broth mixture into bowls. Garnish with Cilantro.
