Marinade 3 chicken breasts in
1/4 C. soy sauce
2 T. brown sugar
2 T. oil
1 tsp. ginger
1 tsp. garlic

Dressing:
1/2 C. Sugar
1/2 C. rice wine vinegar
1 tsp. salt
1/2 tsp. black pepper
1 tsp. sesame oil
Sesame seeds

Salad:
8 oz. spaghetti noodles (broken in slightly smaller pieces)
1 red or orange bell pepper
1 C. Chinese pea pods
1 cucumber, peeled and sliced
1 carrot, grated
1 bag of your favorite salad greens

Directions:
Directions:
Dressing: Combine sugar, vinegar and salt. Heat until sugar is dissolved, stirring frequently. Add black pepper and oil. Refrigerate with pasta noodles.

Salad: Cook pasta, according to package directions until firm tender. Drain and rinse in cold water and drain thoroughly. Add pasta noodles to salad dressing to marinate and refrigerate.

Cook chicken thoroughly and cool. Do not place on paper towel as chicken may stick. Add pepper, peapods, cucumber and carrot to salad greens and toss. Top with pasta noodles and cooked chicken and serve.

This recipe came about as an accident. I was making a chicken pasta salad recipe from Jenny Holman Cragun. I had cooked the chicken then at some point I inadvertently turned the page and made another completely different recipe. I added the two together and I really liked it so I kept it that way. I also like making just the noodles and dressing and eating them together. Yummy!
