Sweet Potato Pie Recipe

2 cans of sweet potatoes drained
2 eggs
2egg yolks
2/3 C sugar
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1 1/4c of half and half or milk

Put sweet potatoes in a processor and puree until smooth.
Add all ingredients into puree sweet potatoes and mix up thoroughly.

Heat oven to 350 degrees.

Press dough into pan firmly and pour in mixture.

Bake pie for about 1 hr or until the filling is set.

Take out and let cool on a cooling rack.


I use canned sweet potatoes and pre made pie shells from grocery store. Cuts down on preparation time.
If pie dough is raw then you must bake it first before putting in filling.
