1 c. flour
2 t. lemon zest
2 t. baking powder
1/4 t. salt
3/4 c. milk
1 egg yolk
1/4 c. butter
3 egg whites

Directions:
Directions:
In a medium mixing bowl stir together flour, baking powder, lemon peel, and salt. add egg yolk, butter, and milk. Stir. Batter will be lumpy.
In another bowl, beat egg whites at medium speed until stiff peaks form (tips stand straight). Gently fold egg whites using a rubber spatula into flour mixture. Cut down and sweet upwards, giving the bowl a quarter turn before repeating. leave a few fluffs of egg whites. Do not overmix. Pour onto hot griddle and cook as you would regular pancakes.
