1/2 lb. bacon (10 slices) cut into 1/2 inch pieces
1 small onion, finely diced
2 medium carrots, cut into 1/4 inch pieces
2 celery stalks, diced
3 cups chicken stock
2 cans white beans, drained and rinsed
2/3 t. dried sage
pinch of ground pepper

In a medium saucepan, cook bacon until brown and just crisp-about 5 min. Remove from heat. Using a slotted spoon transfer bacon to a paper towel lined plate, set aside. Pour all but about 1 T. of bacon fat from pan. Return pan to heat. Add onions, carrot, and celery. Cook, stirring occasionally until the vegetables begin to soften (about 3 min.). Add the stock and 2 cups water. Bring to a boil. Reduce heat to medium and simmer 15 min. Add beans, sage, and pepper and half the bacon. Simmer for 10 min. Garnish with remaining bacon.
