9 lg. baking potatoes, peeled and diced
1 stick unsalted butter, room temperature
12 oz. cream cheese, room temperature
3/4 c. sour cream
fresh ground pepper to taste

Directions:
Directions:
Place diced potatoes in large saucepan and add water to cover. Heat to boiling. Reduce heat and simmer over medium heat until tender. While potatoes are cooking, cut butter and cream cheese into small chunks. Remove potatoes from heat, drain and place in mixing bowl. Add butter and cream cheese. Beat with electric mixer until light and fluffy, or use a hand masher. Beat in sour cream (add more, if desired) and pepper. Serve immediately. Yield: 8 servings.
