1 package of sweet Italian sausage
1 onion, cut and sliced long & thin
2 bell peppers, any color, cut and sliced long & thin
Italian seasoning
Salt and pepper
Cooking oil

Directions:
Directions:
Coat bottom of frying pan with oil, let heat then add sausage. Fry till crispy and brown on all sides. Can take up to an hour.

In separate frying pan, coat bottom of pan with oil and let heat. Add peppers and onions and coat top with Italian seasoning, salt and pepper. Stir well then add a few more shakes of seasoning. Cover and let sit simmering for the next 30 or 40 minutes stirring often. Season again if you like stronger flavor.

When your sausage is brown and crispy, take out of pan and cut up into small pieces. Add to peppers and onions and let cook together for at least 15 mins. Serve with rolls or on its own. This is time consuming, but worth it.
