1 Tbsp olive oil
1 large onion, chopped
2 carrots, chopped
2 cloves garlic, chopped
2 tsp curry powder
1 c long grain white rice
salt and pepper
1 1/2 lbs large shrimp, peeled and deveined
1/2 c fresh basil

Directions:
Directions:
Heat the oil in a large skillet over medium heat. Add the onion and carrots and cook , stirring occasionally, until soft, 6-8 minutes.
Add the garlic and curry and cook stirring, until fragrant, 2 minutes.
Add the rice, 2 1/2 c water, 1/2 tsp salt and pepper and bring to a boil. Reduce heat to medium low, cover, and simmer 15 minutes.
Season the shrimp with a little salt and pepper and nestle them in the partially cooked rice. Cover and cook until the shrimp are opaque(pink) about 4-5 minutes. Fold in the basil and serve.
