2 Pie shells
1 frozen box of broccoli
1 large onion-sliced thin
mushrooms(optional)
1 egg
7 slices of American cheese
1 large can of sweet potatoes- drained and mashed

Directions:
Directions:
Preheat oven to 350.
Bake bottom pie shell to brown.
Cook frozen box of broccoli.
Saute onions and mushrooms in butter.
Put this mixture in a bowl with a beaten egg. Mix and then add cooked broccoli; mix again.
Place mix in browned pie shell and place cheese on top covering entire mixture.
Spread mashed sweet potatoes on top.
Now criss cross 2nd piece of crust on top.
Bake at 350 till brown.

Everything is already cooked so you are just heating everything up.
I often make this for a crowd and it always is a hit. Although I am not much of a vegetable eater, I love this.
