2 C. cooked rice
1 green onion
1 egg
1 slice, precooked ham, chopped
or a pkg. of chopped ham
2-3 sliced mushrooms, if desired
2 T. frozen peas
1 T. oil
Cooking spray

Directions:
Directions:
Cook 1 cup of rice to 2 cups water, bring to a boil, turn to low and cook 15 minutes with lid on pan.
Spray a fry pan with cooking spray. Beat the egg in a custard cup and pour into skillet. Scramble the egg. Put on a plate to cool. In a second skillet, heat oil and add chopped onion, peas, mushroom, ham and cook until ham is brown and onion is clear and tender. Then add cooked rice to vegetables and ham and fry for a few minutes. Serve with Soy Sauce.
