3 slices bacon, cut in pieces
1 onion, chopped
1 carrot, grated
1/2 t. dried parsley
2 (13 3/4 oz.) cans lower-salt chicken broth
10 oz. frozen chopped broccoli, thawed
pepper to taste
2 1/2 c. mashed potatoes

Directions:
Directions:
Cook bacon in large saucepan until lightly browned and crisp, 3-5 minutes. Remove with slotted spoon to paper towels. Pour off all but 1 tablespoon bacon fat. Add onion and carrot; cook over medium heat, stirring until soft but not browned, about 3 minutes. Add broth, parsley, pepper and any additional seasonings. Bring to boil. Add broccoli; boil. Lower heat; cover; boil gently 5 minutes. Whisk in potatoes. Cover; gently heat through. Add bacon. Add salt if desired. Note: For thicker chowder, in food processor, puree 2 c. of soup before adding potatoes.
