3 lg. sweet potatoes (3 lbs.), washed, pricked with fork
2 t. unsalted butter
3/4 c. nonfat buttermilk
1/2 t. salt
1/4 t. pumpkin pie spice or cinnamon

Directions:
Directions:
Preheat oven to 400. Place potatoes on foil-lined baking sheet; roast 1 1/2 hours or until very tender. In small saucepan, over medium heat, cook butter 2 minutes, until lightly browned. Remove from heat; add buttermilk. Halve sweet potatoes; scrape flesh into bowl. Add buttermilk mixture, salt and spice. Mash until smooth and creamy.
