2 shallots, minced
2 T. unsalted butter
2 T. flour
1/2 c. milk
3 oz. cream cheese, softened, in bits
3 10 oz. pkg. frozen chopped spinach, cooked, squeezed dry
3/4 t. salt
1/4 t. ground pepper
1/4 c. sour cream

Directions:
Directions:
In saucepan over medium heat, saute shallots in butter 3 minutes. Blend in flour; saute 2 minutes. Blend in milk; cook 2 minutes until very thick, whisking constantly. Remove from heat; stir in cream cheese. Add spinach and seasonings; mix. Heat; remove from heat; add sour cream.
