4 artichokes
2 T flour
2 T oil
1 bunch green onions, chopped
2 stalks celery chopped
1 large green pepper chopped
3 pods garlic chopped
2 jars oysters, reserve liquid
1 cup water



Directions:
Directions:
Boil the artichokes in water seasoned with salt and pepper and a little oil until tender. Set aside. Make a roux with the flour and oil. Add the green onions, celery, bell pepper and garlic, and cook about 15 minutes on low fire. Add the water and oyster liquid and cook on low for 1 hour, stirring occasionally. Add oysters and cook 5-10 minutes longer. While liquid is cooling, drain artichokes and remove leaves. Separate the artichoke hearts and cut in chunks. Place the artichoke hearts in the bottom of soup dishes and arrange artichoke leaves around the dishes and pour the oyster stew over the artichoke hearts. Use the artichoke leaves to dip up the oyster stew.
