2 chopped medium onions
1 tbls olive oil
8-9 cups chicken broth
1 can Italian tomatoes
1-2 cans drained chick peas
lots of basil
1/2 cup Orzo pasta
grated cheese for garnish

Directions:
Directions:
Saute' onions in olive oil.
Add :
chicken broth
tomatoes(break up with back of spoon)
chicken broth(I use 2 cans)
then add lots of basil.
Bring all this to a boil and add pasta.
Simmer for approximately 10 mins.
Serve in soup bowls and pass the grated cheese...

I got this very easy and very good recipe from a friend of mine, Ruth. She sometimes adds small meatballs. You can also add any kind of veggie you like, such as: green beans,corn, etc.
I don't add anything but original ingredients. It is so good...great on a cold afternoon.Just make sure you have lots of fresh,grated parm cheese. Enjoy!
