1 lrg. onion, sliced
3 lb. eye of the round roast
1/2 cup cooking white wine or cooking sherry
1 pkg. dry au jus gravy mix
2 cups beef broth or beef consommé
Ciabatta rolls
cheese (I perfer pepper jack)

Directions:
Directions:
Place onion in slow cooker. Add roast. Combine wine and gravy mix. Pour over the roast. Add enough broth to cover the roast. Cover and cook on high 5-6 hours or low for 10-12 hours. Remove meat from the liquid. Let stand 5 mins. before slicing thinly across grain. Slice ciabatta rolls in half and broil. Place meat and onion on roll and top with pepper jack cheese, put back in broiler until cheese is melted. Serve with au jus!
