For salad:
1 - 2 c baby romaine greens
1/2 avocado, chopped
1/4 c pomegranate seeds
1/4 lb. poached salmon fillet
2 T vinaigrette dressing.

For dressing:
1 shallot chopped and mashed (or substitute onion)
1 t Dijon mustard
3 T red wine vinegar (or substitute balsamic)
1/3 c olive oil
salt and pepper to taste

Arrange greens in salad bowl. Top with avocado, pomegranate seeds, and salmon. Drizzle 2 T dressing over top and serve promptly.

My son-in-law Mark gave me the vinaigrette dressing recipe and I use it with lots of salads. The recipe makes more than enough for the salad, but it keeps well in the refrigerator. I actually triple the recipe for the dressing in order to keep it on hand for daily use.
