1 3/4 c flour (1 cup mix, add 3/4 c)
1/2 c sugar
1 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
2 T. vegetable oil
1 egg
1/2 c buttermilk
1 tsp lemon rind (optional)

Mix 1 cup flour and all other ingredients. Mix for 1/2 min. Add last 3/4 c flour for 1 min. Put in refrigerator for 1 hr. Flour surface well, roll to 1/4" thick.
