2/3 c. butter
1/2 c. sugar
2 egg yolks
1 tsp. vanilla
1 1/2 c. flour
2 egg whites, slightly beaten
1 c. walnuts, very finely chopped
1/2 c. strawberry or apricot preserves

Directions:
Directions:
Preheat oven to 375º.

In a large mixing bowl, beat butter with an electric mixer on medium speed until fluffy. Add sugar and beat until combined. Beat in egg yolks and vanilla. FInally add flour. Stir my hand if it becomes to thick for mixer. Cover and chill dough about 1 hour.

Shape dough into 1 inch balls. Roll balls in egg whites, then in walnuts. Place 1 inch apart on cookie sheet covered with parchment paper. Press thumb into the center of each ball to make a "thumbprint" depression.

Bake at 375º for 10 - 12 minutes. Transfer cookies to a wire rack to cool. Fill center with preserves.
