3-4 bananas, mashed
1/3 c. shortening
1 level t. baking soda
1 c. sugar
1 egg
pinch of salt
3/4 c. chopped walnuts or pecans (optional)
2 c. well sifted flour
1 t. vanilla

Directions:
Directions:
Preheat oven to 350. Grease and flour 2 loaf pans or 24 muffins. Combine all above. Mixture is thick. Sprinkle 1/4 cup brown sugar after mixture is poured into pans (optional). Bake loaves 45-50 minutes until top springs back and is light brown. Watch for golden brown color on top and try not to over bake or it will be too dry.
