4 c. cooked black beans, drained and rinsed
2 c. cooked corn kernels, cut from the cob
1 red bell pepper, finely chopped
2 large cloves garlic, minced or 1 tsp. minced garlic
1/4 c. chopped cilantro leaves
2 jalapeno Peppers, seeded,and finely minced (very small)
1/2- 3/4 Bunch Green Onions, sliced Thin
2 limes, juiced
1/2 c. extra-virgin olive oil
Salt and freshly ground black pepper

Directions:
Directions:
In a large bowl combine all the ingredients, and stir to mix well.

Season the black bean relish with salt and pepper, and set aside at least 1/2 hour before serving.

Finish the black bean relish with the chopped cilantro.

Serve this dish with "Spicy Barbecued Shrimp Skewers" in the Main Dish Seafood section.

You can cheat with frozen corn kernels cooked if necessary.
