4 large sweet potatoes (about 1 1/2 lb.)
4 tbsp. unsalted butter, softened
3/4 tsp. salt
1/4 tsp. freshly ground black pepper
a shot or two of Jack Daniels or other Bourbon or Whiskey

Directions:
Directions:
Place the potatoes on a roasting pan and roast until tender, 45 min. to 1 hour. Remove from the oven and let sit until cool enough to handle. Peel the potatoes and place in a large mixing bowl. Add the remaining ingredients and mash with a potato masher or heavy fork. Cover to keep warm until ready to serve.

Serves 4

Goes with Pork Chops Stewed with Apples and prunes in the "Main Dish Pork" section.
