2 t. olive oil
4 c. baby spinach, finely sliced
1 c. grape tomatoes, halved
1 t. coarse salt
1/4 t. freshly ground pepper
10 oz. frozen corn kernels, thawed

Directions:
Directions:
In large saucepan, heat oil over medium-high heat. Add corn; cook 1-2 minutes. Add spinach; cook until wilted, 1-2 minutes. Stir in tomatoes; cook 1-2 minutes. Season with salt and pepper. Serve warm, cold or at room temperature. (To chill, cool, refrigerate covered up to 4 hours.)
