3/4 cup medium ground cracked wheat
3 cups snipped parsley
1 1/2 cups unpeeled tomatoes, chopped with juice (@ 3 tomatoes)
1/2 cup green onions with tops, minced
1/4 cup olive oil
1/3 cup fresh lemon juice
1/4 cup snipped mint leaves
1 tsp salt
dash freshly ground pepper

Directions:
Directions:
Soak wheat in water to cover in small bowl, about 30 minutes. Drain, pressing out excess water. Mix wheat and remaining ingredients in large bowl. Cover. Refrigerate at least 3 hours or overnight.
