zucchini eggs flour Italian seasoned bread crumbs Parmesan cheese (optional) oil (to coat bottom of pan and then some) salt and pepper
Slice zucchini. Beat eggs. Mix flour and bread crumbs together along with cheese. Dip zucchini slices in egg, cover in dry ingredients, then dip in egg mixture, then in dry ingredients again. Fry in oil until golden. Remove and place on paper towels to remove excess oil. Season with salt and pepper to taste.
