5 Potatoes, cubed 1 T Oil (or bacon drippings) 1/2 to 3/4 C hopped Onion Salt and Pepper to taste
This can be fried on the stove in a covered skillet or an electric fry pan. Heat the oil. Then add the rest of the ingredients. Cover and simmer on low for 25 minutes. Uncover and fry on medium heat for another 5 minutes or until golden brown and crisp. Turn the potatoes over a couple of times.
