3 eggs, well beaten
1 c. raisins (can substitute dried cranberries or Craisins)
1 tsp. vanilla
1 c. butter
1 c. brown sugar
2 ½ c. flour
1 tsp. salt
1 tsp. ground cinnamon
2 tsp. baking soda
2 c. oatmeal (can substitute ½ c. wheat germ)
¾ c. chopped pecans

Directions:

Combine eggs, raisins, and vanilla and let stand for one hour, covered with plastic wrap. Cream together butter and sugars. Add flour, salt, cinnamon and soda to sugar mixture. Mix well. Blend in egg-raisin mixture, oatmeal, and chopped nuts. Dough will be stiff. Drop by heaping teaspoons onto un-greased cookie sheets, flatten slightly. Bake at 350º for 10-12 minutes or until lightly browned.
