1 lb white or pinto beans (Emma preferred pinto)
lb bacon, cut into pieces
C brown sugar
tsp dry mustard
C chopped onion
C Sweet molasses
1 8 oz can tomato sauce
Salt and Pepper to taste
Dash of Tabasco (optional)

Directions:
Directions:
Soak beans in water overnight. Next day, put in stockpot with the chopped onion, a little salt and 6-8 Cups of water and boil until beans are soft and tender. Drain and reserve about 3 Cups of the liquid. Mix together bean juice, tomato sauce, brown sugar, molasses, dry mustard and Tabasco. Mix with drained beans.
Put beans in large baking/casserole dish and bury bacon pieces in the bean mixture. Cover with foil and bake in a 250 F oven, for 6 hours.
