1 head green cabbage, chopped
1 red bell pepper, seeded, chopped
1 red or white onion, chopped
Ice cubes
1 Tablespoons vegetable oil
Salt and freshly ground black pepper

Directions:
Directions:
Combine the cabbage, bell pepper, onion, and a tray of ice cubes in a zip lock plastic bag. Put in the refrigerator until 30 minutes before serving, or up to 3 hours. In a nonstick skillet over high heat, heat the oil. Pour in the cabbage vegetables. Stir, then sprinkle with salt and plenty of freshly ground black pepper. Cover and reduce heat to medium. Steam, stirring frequently, until the onion begins to brown but the cabbage is still crisp, about 15 minutes. If the cabbage is cooked 10 minutes longer over high heat, the onions will brown and become slightly caramelized, delicious. Serve hot as a side dish along with pinto beans, black eyed peas or purple hull peas, and corn bread.
