6 medium -sized potatoes, 2 lbs
4 cups water
1/2 Teaspoon salt
2 Tablespoons butter
2 Tablespoons vegetable oil
1/2 cup thinly sliced onions
2 Tablespoons butter or bacon drippings
2 Tablespoons parsley

Directions:
Directions:
Wash potatoes well, remove sprouts and blemishes. Peel potatoes and cook covered for 10-15 minutes in boiling water and salt until not quite done. While hot slice potatoes thinly and evenly. Sauté to an even brown in a heavy skillet in : 2 Tablespoons butter and 2 Tablespoons vegetable oil. In another skillet sauté 1/2 cup finely sliced onions in 2 Tablespoons of butter or bacon drippings. Preheat oven to 350 degrees. Mix onions and potatoes together gently. Season to taste, sprinkle with parsley. Cover potatoes, let them cook in the oven for about 20 minutes, turning them for even brownness. On last turn add 2 Tablespoons parsley. Bake uncovered 10 minutes longer.
