2 lbs zucchini, sliced thinly or shredded
¼ C chopped onion
1 Can cream of chicken soup
1 C sour cream
1 C shredded carrots
1 pkg Stove Top Stuffing
1 stick butter, melted
Salt and Pepper

Directions:
Directions:
Cook zucchini and onion in boiling salted water, until translucent –about 5 minutes, and drain.

Combine soup and sour cream and add pinch of salt and pepper to taste. Stir in carrots. Fold in cooked squash and onion.

Combine melted butter and stuffing. Spread half of stuffing mixture on bottom of baking dish. Spoon vegetable mixture on top, and sprinkle remaining stuffing over vegetables.

Bake 25 to 30 minutes, at 350º.
