5 large red peppers,seeded and halved
1 large onion chopped
1 tbsp. olive oil
6 cups vegetable stock
1 large potato peeled and diced
1-2 cloves of garlic
1/2 tsp. dried thyme

Directions:
Directions:
Put peppers cut side down on baking tray,bake until soft. While peppers are baking saute onions in olive oil for approx.5 min.Add stock,potato,garlic,thyme and bring to a boil,reduce heat and simmer until potato's are cooked. Add peppers and turn off heat. Let cool for about 20 min. Working in batches puree the soup. When ready to eat reheat the soup.
