2 lg. onions, chopped
1 lg. gr pepper, chopped
2 stalks celery, chopped
2 cloves garlic, minced
1 c catsup
16 oz can stewed tomatoes
1/4 c cider vinegar
1/3 c brown sugar
1 t chili powder
1/2 t each of basil, oregano, gr. cinnamon, salt & liquid smoke.

Simmer all ingredients together for 10 minutes, uncovered. Put cooked, sliced, trimmed brisket in sauce and simmer for 3 hours or bake at 325º

After preparing the brisket (following the related recipe) on Day 1 and doing the slicing and trimming of the meat, you can prepare this sauce on Day 2 to make a barbecued beef brisket for sandwiches. Good for a picnic with potato salad and vegetables of the season.
