Ingredients:  
4 cups peeled and coarsely chopped potatoes
3 cups thinly sliced leeks (about 4 leeks, white part only)
2 quarts chicken stock, or vegetable bouillon
1 tsp salt
black pepper to taste
1 cup heavy cream, half and half, whole or 2 per cent milk (affects richness of flavor)
3 T. finely snipped fresh chives

Directions:
Directions:
Simmer potatoes, leeks, stock, and salt until vegetables are tender, about 50 minutes.
Mash soup thoroughly. Season with salt and pepper; stir in cream/milk. Before serving, return to stove and return to simmer. Sprinkle with chives.

You can vary it by adding some chopped onion sautéed in a tiny amount of bacon grease, and/or some slivered cabbage.
