1 cup granulated sugar
cup corn starch
1 cups cold water
3 egg yolks, slightly beaten
Grated peel of one lemon
1/4 cup lemon juice
1 tbsp margarine
3 egg whites
1/3 cup granulated sugar

Directions:
Directions:
In medium sauce pan combine 1 cup sugar and corn starch. Gradually stir in water until smooth. Stir in egg yolks. Stirring constantly, bring to a boil over medium heat: boil one minute. Stir in next 3 ingredients. Spoon hot filling into crust. Beat egg whites with rest of sugar until stiff. Spread over filling and brown in 350 oven (15 to 20 minutes.)
