1 lb. skinless boneless chicken strips
1 bag salted pretzels
2 eggs
1/4 c. extra virgin olive oil

Directions:
Directions:

Preheat skillet on medium with oil. Place pretzels in food processor or blender and grind until fine. Place fine pretzels in bowl. Stir 2 eggs in separate bowl.

Coat chicken in pretzel, then egg, then pretzel again. Place chicken in skillet in a single layer for 2-3 minutes on each side.


This is great to add in squash and zucchini. Prepare veggies the same way as the chicken - dip in pretzel, egg, then pretzel again.
