1 egg
2 T. lemon juice
2 c. Parmesan cheese
2 c. bread crumbs; Italian, seasoned, or plain

Directions:
Directions:
Add lemon juice to egg and beat slightly. Set aside. In a separate bowl mix Parmesan cheese with bread crumbs. Dip fish pieces in egg mixture, then crumbs. Pan fry in a bit of olive oil in a hot skillet; 3-4 minutes each side. Serve with cole slaw and baked potato, with cocktail or tartar sauce on the side.
