"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

2/3 c. almonds, slivered and toasted
1/2 c. butter, softened
3/4 c. sugar
2 eggs
3/4 tsp. baking powder
1/4 tsp. baking soda
1 tsp. vanilla
1/2 tsp. vanilla extract
2 c. flour
1/4 tsp. salt
melted chocolate, for garnish

Cream butter and sugar, beat in eggs, vanilla and almond extract. Combine dry ingredients, add to creamed mixture until blended. Stir in nuts.

Divide equally and shape into 3 or 4 long skinny logs. Place on greased and floured baking sheets at least 2 inches apart. Bake at 325 for 25 min or until light brown.

Remove from oven and cool on rack for 5-10 minutes. Slice diagonally into 1/2 inch slices. Place slices upright 1/2 inch apart and bake for 10 minutes. **For crisper Biscotti, turn off oven at end of 10 minutes and allow the slices to cool in oven.

When completely cool, dip in melted chocolate or drizzle with melted chocolate.
