2 cups chopped cucumber 1 cup chopped red bell pepper 1 cup chopped tomato 1/2 cup chopped green bell pepper 1/2 cup chopped red onion 1/2 cup chopped fresh parsley 2 tablespoons red wine vinegar 1 tablespoon olive oil 1/2 teaspoon salt 1/4 teaspoon pepper
Combine all ingredients and serve. This recipe is excellent with Chicken Shawarma.
