Ingredients:  
1 large onion
1 T. butter, melted
3-4 medium zucchini, sliced
5-6 tomatoes, quartered (if the tomatoes are large I use 4-5 and slice into eighths)
1 cup Parmesan cheese
salt and pepper to taste

Directions:
Directions:
Saute onion in the melted butter until golden. Add the sliced zucchini and season. Cook covered for 10 minutes or until zucchini is tender. Add the tomatoes and cook 10 minutes longer. Transfer to a greased casserole and layer with the cheese on top. Bake uncovered at 350 degrees until heated through and the cheese on top is lightly browned,
