3 lbs. ricotta
2 egg yolks
2 T. fresh chopped parsley
1/2 t cinnamon
1/2 t. sugar
salt and pepper to taste
tomato sauce
1 box jumbo shells
1 cup shredded mozzarella cheese
1/2 cup Parmesan cheese, grated

Directions:
Directions:
Mix the first 6 ingredients together and set aside. Cook the pasta shells according to the directions on the package. Drain and rinse with cool water. Stuff each shell with a heaping spoonful of ricotta mixture. Cover bottom of a shallow baking dish with some tomato sauce. Place stuffed shells in dish and cover with additional sauce. Sprinkle with mozzarella and Parmesan cheese. Bake at 350 degrees for 30 - 40 minutes.
