1 whole chicken, rinsed and patted dry
2 carrots, cut into 1-inch chunks
2 stalks of celery, cut into chunks
1 medium onion, sliced
juice from one lemon
3 sprigs of fresh thyme
salt and pepper

Directions:
Directions:
Coat chicken, inside and out, with salt and pepper. Place in the ceramic dish inside the slow cooker. Scatter vegetables around the chicken and top off with lemon juice and thyme. Put the lid on crock pot and turn it on high for 6 hours. NO PEEKING!

Serve chicken with garlic mashed potatoes and gravy (from the juice left in the pot, of course!) for the ultimate comfort food meal! This recipe is so basic and easy that a more experienced cook can experiment with their own spices, herbs, and rub combinations! Have fun!
