1 c. shredded sharp process American Cheddar,
1/2 c. butter softened,
1 1/3 c. flour,
2 Tbs. water,
1 6 oz. package dried apricot halves, quartered
1 c. sugar

Directions:
Directions:
Combine cheese and butter. Add flour and mix well. Stir in 2 Tbs. water and shape dough into a ball. Chill several hours. Cover apricots with boiling water. Cook over medium heat until tender (approximately 20 minutes). Drain well, return to saucepan and stir in sugar. Cook over low heat, stirring until smooth ( 5 minutes). Cool. Divide dough into two balls. Roll each ball into a 10 inch square. Cut into 2 1/2 in. squares. Put 1 tsp. apricot filling in center of each square. Moisten edges with water, bring up corners diagonally to center. Crimp edges at center. Place foldovers on lightly greased baking sheet or sheet lined with parchment paper. Bake at 325 for 10 minutes or until lightly browned.

An unusual taste. Can be baked and frozen and then re-heated slightly before serving. Dust with powdered sugar.
